Basil Pesto Pasta and Sun dried Tomato Pesto Pasta

Long day too tired to cook a proper meal. So for one of those lazy days I made Basil Pesto Pasta for me and Sun dried tomato Pesto Pasta for my husband. I always prepare both these pesto sauces at home and store in refrigerator to make quick dinner when lazy to cook a proper meal. 😁

Here is the recipe of both the pesto

Basil Pesto Sauce
Ingredients:-

  • 2 cups packed fresh basil leaves .
  • 2 cloves garlic
  • 1/4 cup pine nuts .
  • 2/3 cup extra-virgin olive oil, divided .
  • Kosher salt if available or any salt and freshly ground black pepper, to taste .
  • 1/2 cup freshly grated Parmesan cheese

Method:-

1. Combine the basil, garlic, and pine nuts in a food processor and pulse until coarsely chopped. Add 1/2 cup of the oil and process until fully incorporated and smooth. Season with salt and pepper.

2. If using immediately, add all the remaining oil and pulse until smooth. Transfer the pesto to a large serving bowl and mix in the cheese.

3. If freezing, transfer to an air-tight container and drizzle remaining oil over the top. Freeze for up to 3 months. Thaw and stir in cheese.

4. For Preparing Pasta heat oil in pan add the pesto and any boiled Pasta of your choice.

Sun dried tomato Pesto

Ingredients :- .

  • 1/4 cup of sun dried tomato pack with olive oil
  • 2-3 cloves garlic
  • 1/4 cup pine nuts
  • salt to taste
  • Olive oil
  • Method:
  • In a food processor add in your sun dried tomatoes, garlic, pine nuts olive oil and salt
  •  Put the lid of the food processor and pulse the food processor while drizzling the olive oil until the mixture comes together.
  •  If using immediately, add all the remaining oil and pulse until smooth. Transfer the pesto to a large serving bowl and mix in the cheese.
  • If freezing, transfer to an air-tight container and drizzle remaining oil over the top.
  • For Preparing Pasta heat oil in pan add the pesto and any boiled Pasta of your choice.
